Watermelon Cucumber Slush


Z and I recently returned from a trip to Walt Disney World. With minimal crowds and sufferable temperatures (speaking as a Northern Californian), the destination provided a much-needed break from all obligations. Having never been, we spent our waking hours touring all the parks while eating any and all tempting treats. Memorably, one of my favorites came in slush form.

To beat the heat after a lunch of fish and chips in Epcot’s miniature England, we found a small stand nestled between Japan and the American Adventure called Florida Fresh serving a watermelon cucumber slushy, gin optional. Perfectly slushed with ripe watermelon and refreshing cucumber, it was easy to ignore all other drinks from around the world (save for the margaritas in Mexico).

Even though Maryland weather isn’t exactly permitting summer drinks on the patio just yet, I couldn’t help but recreate this slush at home.

Watermelon Cucumber Slush
Serves 1

1 cup ripe watermelon, chopped
½ cup cucumber, peeled and chopped
¼ cup concentrated lemonade*
1 cup ice, cubed or crushed
1 teaspoon sugar, optional to taste

*I used a concoction of one Crystal Light Pure lemonade packet mixed into ½ cup water and the juice of one lemon.


After preparing the melon and cucumber, with the lemonade, puree in a blender (I used a Nutribullet). Add ice and puree until in slush form. If the mixture is too thick to your liking, add an additional ¼ cup liquid (lemonade, watermelon, or water); too thin, add ice. Serve immediately.
